Classic Australian Lamb Roast
A traditional Australian-style roast lamb recipe with a flavorful blend of herbs and spices.

- ●4 sprigs Rosemary
- ●2 tsp Smoked paprika
- ●2 tsp Salt
- ●1 tsp Pepper
- ●2 tbsp Olive oil
- ●3 cloves Garlic

Preheat the oven to 200°C (400°F).

Rinse the lamb roast and pat it dry with paper towels.

In a small bowl, mix together the rosemary, smoked paprika, salt, and pepper.

Rub the herb mixture all over the lamb roast, making sure to coat it evenly.

Heat the olive oil in a large oven-safe pan over medium-high heat. Sear the lamb roast until browned on all sides, about 2-3 minutes per side.

Transfer the pan to the preheated oven and roast the lamb for 20 minutes per kilogram, or until it reaches your desired level of doneness.

Remove the lamb from the oven and let it rest for 10-15 minutes before slicing and serving.
