Croatian Vegetable Flatbread
A rustic Croatian-inspired flatbread topped with a variety of sautéed vegetables and perfect for snacking or as a side dish.
Ingredients
- ●1 loaf Flatbread (Croatian rustic bread)preferably day-old bread
- ●3 tablespoons Olive oilfor brushing flatbread
- ●1 medium Onionchopped
- ●2 cloves Garlicminced
- ●1 medium Bell pepperany color, chopped
- ●1 medium Zucchinichopped
- ●1 medium Tomatochopped
- ●1/4 cup Fresh parsleychopped
- ●to taste Saltfor seasoning
- ●to taste Black pepperfor seasoning

1. Preheat oven to 400°F (200°C).

2. Slice the flatbread into 1-inch (2.5 cm) thick slices.

3. Brush the flatbread slices with olive oil and season with salt and black pepper.

4. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

5. Add the chopped onion, garlic, bell pepper, and zucchini, and cook for 5-7 minutes, until the vegetables are tender.

6. Add the chopped tomato and cook for an additional 1-2 minutes.

7. Brush the flatbread slices with the remaining 2 tablespoons of olive oil and place on a baking sheet.

8. Bake the flatbread in the preheated oven for 5-7 minutes, until crispy and golden brown.

9. Remove the flatbread from the oven and top with the sautéed vegetables.
