Mexican Chicken Roast
A flavorful Mexican-inspired roast chicken dish with a rustic twist.
Ingredients
- ●1 (3-4 pound) whole chicken chicken
- ●1 tablespoon olive oil roast
- ●1 teaspoon ground cumin dutch
- ●1 teaspoon smoked paprika dutch
- ●1/2 teaspoon salt dutch
- ●1/4 teaspoon black pepper dutch
- ●1/4 cup chopped fresh cilantro dutch
- ●1 lime, juiced dutch
- ●2 cloves garlic, minced dutch

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the cumin, smoked paprika, salt, and black pepper.

Rub the spice mixture all over the chicken, making sure to get some under the skin as well.

Drizzle the chicken with olive oil and sprinkle with chopped cilantro.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
