Japanese-Style Roasted Vegetables
A delicious and easy-to-make vegetarian dish with a variety of Japanese-inspired flavors. This recipe is perfect for a weeknight dinner or a special occasion.
Ingredients

- ●1 cup mushroomssliced
- ●2 tbsp soy sauceor to taste
- ●1 tbsp rice vinegaror to taste

Preheat the oven to 425°F (220°C).

Toss the sweet potatoes, carrots, and mushrooms with 1 tbsp of oil, salt, and pepper in a large bowl until they are evenly coated.

Spread the vegetables out in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned.

In a small bowl, whisk together the soy sauce and rice vinegar.

After the vegetables have been roasting for 15 minutes, brush the soy sauce and rice vinegar mixture over them.
