Syrian Cheonggukjang Tagine
A unique fusion of Middle Eastern and Korean flavors in a hearty stew. This Syrian Cheonggukjang Tagine combines the rich, savory flavors of tagine with the spicy kick of cheonggukjang.
Ingredients
- β2 tablespoons syrup
- β2 tablespoons cheonggukjang
- β1 small, chopped onion
- β1 small, grated ginger
- β1 teaspoon salty
- β1 teaspoon syrian
- β2 tablespoons olive oil
- β1 cup, drained and rinsed chickpeas
- β2 cups chicken broth
- β2 tablespoons tomato paste

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the grated ginger and cook for an additional 1 minute.

Add the cheonggukjang and cook, stirring constantly, for 2 minutes.

Stir in the syrup, salty, and syrian. Cook for 1 minute.

Add the chickpeas, chicken broth, and tomato paste. Stir to combine.

Bring the mixture to a simmer and cook, covered, for 20-25 minutes, or until the flavors have melded together.
