Banana Ukrainian Pancakes
A sweet Ukrainian-inspired breakfast pancake recipe with mashed banana and topped with a sweet salty syrup.
Ingredients

- β1 cup all-purpose flour
- β1/2 cup sugar
- β2 eggs
- β1 cup milk
- β2 tbsp butter, melted
Instructions

In a large bowl, whisk together flour, sugar, and eggs.

Add mashed bananas, milk, and melted butter. Stir until combined.

The batter should still be slightly lumpy.

Heat a non-stick pan or griddle over medium heat.

Using a 1/4 cup measuring cup, scoop the batter onto the pan.

Cook for 2-3 minutes, until bubbles appear on the surface and edges start to dry.

Flip and cook for another 1-2 minutes, until golden brown.

Serve warm with sweet salty syrup (recipe below).

To make the syrup, combine equal parts sugar and water in a saucepan.

Bring to a boil, then reduce heat and simmer for 5 minutes.

Remove from heat and stir in a pinch of salt.
