Peruvian Stew with Mushrooms
A hearty and flavorful stew inspired by Peruvian cuisine, made with sautéed mushrooms and tender beef.
Ingredients
- ●1 pound Beef (1-1.5 lbs)
- ●1 cup Mushrooms (1 cup)
- ●1 medium Onion
- ●3 cloves Garlic
- ●2 tablespoons Tomato pasteoptional
- ●2 cups Chicken broth
- ●1 teaspoon Peruvian aji amarillo pepperoptional
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Remove beef from pot and set aside.

Add onion and garlic to pot and cook until softened, about 3-4 minutes.

Add mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

Add tomato paste (if using) and cook for another minute.

Add chicken broth, beef broth, and Peruvian pepper (if using).

Return beef to pot and bring to a boil.

Reduce heat to low and simmer, covered, until beef is tender, about 2-3 hours.

Serve hot, garnished with chopped fresh cilantro (if desired).
