Peruvian Stuffed Potatoes (Causas)
A traditional Peruvian dish made with boiled potatoes, filled with a creamy mixture of chicken, avocado, and herbs, and topped with a tangy salsa criolla.

- β4 large potatoes
- β1 boneless, skinless chicken breastcooked and shredded
- β2 avocadodiced
- β1/4 cup chopped fresh cilantro
- β1/4 cup chopped scallions
- β1/2 cup sour cream
- β2 tbsp lime juice
- βto taste salt
- βto taste black pepper
- β1/2 cup salsa criolla (see notes)

1. Preheat oven to 400Β°F (200Β°C).

2. Boil the potatoes until tender, then let cool.

3. Scoop out the centers of the potatoes and set aside.

4. In a bowl, mix together the chicken, avocado, cilantro, scallions, sour cream, lime juice, salt, and pepper.
