Thai Eggplant Stir Fry

- β2 tablespoons Vegetable oil
- β2 tablespoons Thai red curry paste
- β2 cloves, minced Garlic
- β1 pound, peeled and deveined Shrimp
- β2 tablespoons Fish sauce
- β1 tablespoon Soy sauce
- β1 tablespoon Brown sugar
- β1/4 cup, for garnish Chopped fresh cilantro

Heat oil in a large skillet or wok over medium-high heat.
