Shaggy's Venezuelan Stew
A hearty, flavorful stew originating from Venezuela, made with tender beef and a variety of spices.
Ingredients
- β1 cup (250g) shaggy
- β1 cup (200g) sweet venezuelan rice
- β2 tablespoons (30g) stewVenezuelan stew seasoning
- β1 pound (450g) beefcut into 1-inch (2.5 cm) cubes
- β1 medium (120g) onionchopped
- β3 cloves garlicminced
- β2 tablespoons (30g) tomato pasteoptional
- β2 cups (475ml) beef brothlow-sodium
- β1 cup (240ml) water
- βto taste salt
- βto taste black pepper

1. Heat a large Dutch oven or pot over medium-high heat.

2. Add the beef and cook until browned, about 5 minutes.

3. Remove the beef from the pot and set aside.

4. Add the onion and garlic to the pot and cook until softened, about 5 minutes.

5. Add the tomato paste and cook for 1-2 minutes.

6. Stir in the beef broth, water, shaggy, sweet venezuelan rice, stew, salt, and black pepper.

7. Return the beef to the pot and bring the mixture to a boil.

8. Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.

9. Serve hot, garnished with chopped fresh cilantro or scallions, if desired.
