Mexican Scamorza Flan
A unique dessert that combines the creaminess of flan with the melted goodness of scamorza cheese, a twist on traditional Mexican flavors.

- β8 ounces scamorza cheese
- β1 can evaporated milk
- β1 cup granulated sugar
- β3 large eggs
- β1 teaspoon vanilla extract
- β1/2 cup bitter chocolate chips

Preheat the oven to 350Β°F (180Β°C).

In a mixing bowl, combine the scamorza cheese, evaporated milk, granulated sugar, eggs, and vanilla extract. Whisk until smooth.

Pour the mixture into 6 ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides.

Bake for 45-50 minutes or until the edges are set and the centers are still slightly jiggly.

Remove the ramekins from the water bath and let cool to room temperature.

Cover the ramekins with plastic wrap and refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle a few bitter chocolate chips on top of each flan.
