Caramelized Salmon with Chinese Hash
A flavorful and nutritious Chinese-inspired dish featuring pan-seared salmon with a sweet and savory caramelized sauce served atop a crispy hash.
Ingredients

- β1 Hashstore-bought or homemade
- β2 tbsp Sherrydry
- β2 tbsp Vegetable oilfor pan-frying
- β2 tbsp Soy saucefor caramelized sauce
- β1 tsp Brown sugarfor caramelized sauce
- β1 tsp Gingergrated for caramelized sauce
- β1 tsp Garlicminced for caramelized sauce
- β1/4 cup Green onionschopped for garnish

Preheat oven to 400Β°F (200Β°C).

Season the salmon fillets with salt and pepper.

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the salmon and cook for 2-3 minutes per side, or until cooked through.

Transfer the skillet to the preheated oven and cook for an additional 4-6 minutes, or until cooked to your desired level of doneness.

Meanwhile, heat 1 tablespoon of vegetable oil in a small skillet over medium heat. Add the hash and cook until crispy and golden brown.

In a small saucepan, combine the sherry, soy sauce, brown sugar, ginger, and garlic. Bring to a boil over medium heat, then reduce the heat to low and simmer for 2-3 minutes, or until the sauce has thickened slightly.

To serve, place a salmon fillet on each plate, then top with a spoonful of the caramelized sauce and a sprinkle of chopped green onions. Serve with a side of crispy hash.
