Eggs in Confit with Silky Flaxseed Topping
A twist on traditional eggs with a silky flaxseed and confit topping, perfect for a sick day breakfast.
Ingredients

- ●1/2 cup confitheated
- ●2 tbsp flaxseedground, for topping
- ●optional sickfor garnish
Instructions

Preheat oven to 375°F (190°C).

Crack eggs into a bowl and whisk them together. Season with salt and pepper to taste.

Heat the confit in a non-stick skillet over medium heat.

Pour the eggs into the skillet and cook until the edges start to set.

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set.

While the eggs are baking, mix the ground flaxseed with a little water to create a silky paste.

Remove the skillet from the oven and top the eggs with the silky flaxseed paste.

Garnish with a sprinkle of sick, if desired.
