Sunday Silken Tofu Tagine
A North African-inspired stew made with tender tofu, aromatic spices, and sweet silken tofu. This comforting dish is perfect for a cozy Sunday meal.
Ingredients
- β1 block (12 oz) silken tofucubed
- β2 tsp algerian spice blendavailable at most Middle Eastern markets
- β2 tbsp olive oilfor cooking
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 medium bell pepperchopped
- β1 can (14 oz) canned diced tomatoesdrained
- β1 taginefor serving
- β1/4 cup fresh parsleyfor garnish

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the bell pepper and cook until tender, about 5 minutes.

Add the cubed tofu and cook until lightly browned, about 5 minutes.

Add the diced tomatoes, Algerian spice blend, and salt to taste.

Stir well to combine and bring to a simmer.

Reduce heat to low and let cook, uncovered, for 15-20 minutes.
