- ●2 tbsp Silky oil (olive oil)
- ●1 tsp Earthly spices (ground cumin)
- ●1 cup Stir-fry vegetables (bell pepper, onion, broccoli)
- ●2 cloves, 1-inch piece Fry aromatics (garlic, ginger)

1. Preheat the oven to 425°F (220°C). Wrap the beetroot in foil and roast for 45 minutes.

2. Heat the silky oil in a pan over medium-high heat. Add the earthy spices and stir-fry for 1 minute.

3. Add the stir-fry vegetables and fry aromatics to the pan. Cook for 3-4 minutes.
