French Duck Rillettes
A classic French dish made with tender duck meat, perfect as a snack or appetizer.
Ingredients
- β1 (1 1/2 pounds) Duck breast (boneless and skinless)Fresh, not frozen

2. Season the duck breast with salt, pepper, and chopped thyme.

3. In a large Dutch oven, heat the duck fat over medium heat.

4. Sear the duck breast for 2-3 minutes on each side, or until browned.

5. Transfer the duck breast to the preheated oven and roast for 20-25 minutes, or until cooked through.

6. Remove the duck breast from the oven and let it rest for 5 minutes.

7. Shred the duck breast with two forks and transfer it to a food processor.

8. Add the sliced onions, garlic, and white wine (if using) to the food processor.
