Vietnamese Chicken Noodle Soup
A comforting and flavorful soup made with Vietnamese-style chicken and silky noodles.
Ingredients
- ●1 pound chicken breastboneless, skinless
- ●1 package silky noodles Vietnamese-style rice noodles
- ●1 medium onion
- ●3 cloves garlicminced
- ●2 tablespoons fish sauce
- ●1 tablespoon soy sauce
- ●4 cups chicken broth
- ●2 cups water

In a large pot, heat 2 tablespoons of oil over medium heat.

Add the onion and garlic and sauté until softened, about 3-4 minutes.

Add the chicken and cook until browned, about 5-6 minutes.

Add the fish sauce, soy sauce, chicken broth, and water. Bring to a boil.

Add the silky noodles and cook according to package instructions.

Reduce heat to low and simmer for 5-7 minutes, or until the chicken is cooked through.
