Traditional Slovak Roast Pork
A hearty, slow-roasted pork dish from Slovakia, perfect for a cold winter's day. The pork is marinated in a blend of spices and herbs before being roasted to perfection.
Ingredients

- β2 tablespoons caraway seedsoptional
- β1 teaspoon black pepper
- β1 teaspoon salt
- β1 tablespoon brown sugar
- β3 cloves garlicminced
- β1 medium onionchopped
- β2-3 medium potatoespeeled and chopped
- β2 medium carrotspeeled and chopped

Preheat oven to 325Β°F (160Β°C).

In a large bowl, combine the pork, caraway seeds, black pepper, salt, brown sugar, garlic, and onion. Mix well to coat the pork evenly.

Transfer the pork and marinade to a large Dutch oven or a heavy roasting pan.

Add the potatoes and carrots to the pan, making sure they are covered with the marinade.

Roast in the preheated oven for 2 1/2 to 3 hours, or until the pork is tender and the vegetables are cooked through.
