Spanish Chicken Paella
A classic Spanish dish made with chicken, rice, and vegetables. This paella recipe is a hearty and flavorful meal that's perfect for a family dinner.
Ingredients
- β1 pound chicken breastcut into 1-inch pieces
- β1 cup uncooked white ricepreferably Spanish rice
- β2 tablespoons olive oilfor sautΓ©ing
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 medium tomatodiced
- β1 can artichoke heartsdrained and chopped
- β2 cups chicken brothhomemade or store-bought
- β1 teaspoon safron threadssoaked in 2 tablespoons hot water
- β1 teaspoon smoked paprika

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Remove the chicken from the pan and set aside.

Add the onion and garlic to the pan and cook until softened, about 3 minutes.

Add the tomato and cook for an additional 2 minutes.

Add the artichoke hearts, chicken broth, saffron, and smoked paprika. Stir to combine.
