Slow Simmered Vietnamese Beef Pho
A hearty and flavorful Vietnamese noodle soup made with slow-cooked beef and simmered broth.
Ingredients
- β1 pound beef brisketcut into large pieces
- β1 medium onionsliced
- β2 inches gingersliced
- β2 star anisewhole
- β1 cinnamon stickwhole
- β2 tablespoons fish sauceoptional
- β2 tablespoons soy sauceoptional
- β1 tablespoon sugaroptional
- β1 pound noodlesrice noodles or egg noodles
- β4 cups beef brothhomemade or store-bought

In a large Dutch oven or pot, heat 2 tablespoons of oil over medium-high heat.

Add the beef brisket and sear until browned on all sides, about 5 minutes.

Add the sliced onion and cook until softened, about 5 minutes.

Add the sliced ginger, star anise, and cinnamon stick, and cook for 1 minute.

Add the fish sauce, soy sauce, and sugar (if using), and stir to combine.

Add the beef broth and bring to a boil.

Reduce the heat to low and simmer, covered, for 2-3 hours, or until the beef is tender.

Remove the beef from the pot and slice it thinly against the grain.

Strain the broth through a fine-mesh sieve into a clean pot.

Bring the broth to a boil and cook until reduced slightly, about 10 minutes.

Cook the noodles according to the package instructions.

To assemble the pho, place some noodles in a bowl, add sliced beef, and pour the hot broth over the top.
