Traditional Welsh Lamb Ploughmans Pie
A classic Welsh dish made with slow-cooked lamb, smoked cheese, and ploughmans ingredients, perfect for a hearty dinner.
Ingredients
- β1.5 kg Lamb Shoulderslow-cooked
- β150g Smoked Cheddar Cheesecrumbly
- β100g Ploughmans Cheesecreamy
- β2 tbsp All-purpose Flourfor thickening
- β50g Butterfor browning
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 tsp Fresh Thymedried
- β1 tsp Saltto taste
- β1/2 tsp Black Pepperto taste

Preheat oven to 180Β°C (350Β°F).

Season the lamb shoulder with salt, black pepper, and thyme.

Heat butter in a large pan over medium heat. Brown the lamb on all sides.

Transfer the lamb to a slow cooker or Dutch oven. Add chopped onion and minced garlic.

Cover the slow cooker or Dutch oven with a lid and cook on low for 6-8 hours or on high for 3-4 hours.

Shred the lamb with two forks and set aside.

In a separate pan, melt 1 tbsp of butter over medium heat. Add the smoked cheddar cheese and stir until melted and smooth.

Stir in the ploughmans cheese until well combined. Season with salt and black pepper to taste.

Transfer the lamb mixture to a 20x20cm baking dish. Top with the cheese mixture.

Dot the top of the cheese mixture with the remaining 1 tbsp of butter.

Bake in the preheated oven for 20-25 minutes, or until the cheese is golden brown and bubbly.
