Korean-Style Gimbap Rolls
A classic Korean dish, gimbap is a simple, yet flavorful rice and vegetable roll. This version adds a crunchy twist by incorporating crispy kimchi and crunchy korean chili flakes.
Ingredients
- β1 cup Short-grain rice
- β1/2 cup Kimchi
- β1 tsp Korean chili flakes
- β2 Small potatoespeeled and diced
- β8-10 Gimbap seaweed sheets
- β1/2 cup Crunchy korean vegetables
Instructions

Prepare the short-grain rice according to the package instructions. Set aside to cool.

Cut the kimchi into small pieces and mix with korean chili flakes.

Boil the diced potatoes in water until tender. Drain and set aside.

Lay a gimbap seaweed sheet flat on a clean surface.

Spread a thin layer of short-grain rice onto the seaweed sheet, leaving a 1-inch border at the top.

Add a few pieces of kimchi and boiled potatoes on top of the rice.

Add a few pieces of crunchy korean vegetables on top of the kimchi and potatoes.

Roll the gimbap tightly but gently, applying even pressure.

Repeat with the remaining ingredients and seaweed sheets.

Cut the gimbap rolls into bite-sized pieces and serve.
