Vietnamese-Style Shrimp Pho
A twist on the classic Vietnamese noodle soup, featuring succulent shrimp and a rich, flavorful broth.
Ingredients
- β2 tbsp smoke-infused fish sauceavailable at Asian markets
- β1 pound shrimppeeled and deveined
- β1 package pho noodlesavailable at Asian markets
- β1 tsp briny fish sauceavailable at Asian markets
- β1 tsp cold-pressed rice vinegar
- β1/2 cup crispy shallotsstore-bought or homemade
- β1 bunch scallionschopped
- βto taste salt
- βto taste black pepper
Instructions

Bring 4 cups of water to a boil in a large pot.

Add 1 tablespoon of smoke-infused fish sauce and stir to combine.

Add the shrimp and cook for 2-3 minutes, until pink and cooked through.

Remove the shrimp from the pot and set aside.

Add 2 cups of pho noodles to the pot and cook according to package instructions.

Strain the noodles and add them to a bowl with the cooked shrimp.

In a small pan, heat 1 teaspoon of briny fish sauce over medium heat.

Add 1 teaspoon of cold-pressed rice vinegar and stir to combine.

Pour the sauce over the noodles and shrimp.
