Tunisian Smoked Chicken Tagine
Hearty and aromatic stew made with smoked chicken, sweet potatoes, and Tunisian spices.
Ingredients
- β1 1/2 lbs Smoked Chicken ThighsBone-in, skin-on
- β2 large Sweet PotatoesPeel and dice
- β2 tsp Tunisian Spice BlendAvailable at most Middle Eastern markets
- β1 tsp Smoked PaprikaAdd to give smokiness
- β1 tsp SaltUse kosher or sea salt
- β1/2 tsp Black PepperFreshly ground
- β2 tbsp Olive OilFor brushing chicken and sweet potates
- β1 medium OnionChopped, for garnish

Preheat oven to 300Β°F (150Β°C).

In a small bowl, mix together Tunisian Spice Blend and Smoked Paprika.

Rub the spice mixture all over the chicken thighs, making sure to get some under the skin as well.

Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat.

Sear the chicken thighs until browned on both sides, about 5 minutes per side.

Remove the chicken from the pot and set aside.

Add the remaining 1 tablespoon of olive oil to the pot.

Add the diced sweet potatoes and cook until they start to brown, about 5 minutes.

Add the chopped onion and cook until it starts to soften, about 3 minutes.

Return the chicken to the pot and add enough water to cover the bottom of the pot.

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
