Filipino Blood Stew (Dinuguan)
A traditional Filipino savory stew made with pork blood, meat, and organs. Serve with steamed rice for a hearty meal.
Ingredients

- β1 pound Pork Meat
- β1 pound Pork Organs (Liver, Kidneys)
- β2 tablespoons Smoke
- β2 Hot Chili Peppers
- β2 tablespoons Vinegar
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

In a large pot, combine pork blood, pork meat, and pork organs. Cook over medium heat until the blood is hot and the meat is browned.

Add hot chili peppers, vinegar, salt, and black pepper to the pot. Stir well.

Continue cooking for 10 minutes, stirring occasionally.

Add smoke to the pot and stir well.

Simmer the stew for 20 minutes, or until the sauce has thickened.

Serve the Dinuguan hot with steamed rice.

Note: Traditionally, Dinuguan is cooked over an open flame, which gives it a smoky flavor.
