Smoked Eggplant and Courgette Fritters
A Mediterranean-inspired fritter made with smoked eggplant and courgette, perfect as a side dish or snack.
Ingredients
- β1 large Infused courgette
- β2 medium MelanzaneSmoke until slightly charred
- β1 cup Flour
- β1/2 cup Breadcrumbs
- β1/2 cup Parmesan cheese
- β2 Eggs
- β2 cloves Garlic
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 400Β°F (200Β°C).

Peel the melanzane and slice into 1/2-inch thick rounds.

Smoke the melanzane slices until slightly charred.

Grate the infused courgette in a bowl.

Add the flour, breadcrumbs, Parmesan cheese, eggs, garlic, salt, and black pepper to the bowl with the courgette.

Mix well to combine.

Add the smoked melanzane slices to the bowl and mix gently.

Using your hands, shape the mixture into 8-10 fritters.
