Smoked Aubergine Toast
A delicious and smoky twist on the classic aubergine toast. Perfect for a quick snack or light lunch.
Ingredients
- β2 medium auberginesmoked for at least 1 hour
- β2 slices toasted bread
- β1/4 cup crumbled feta cheese
- β2 tablespoons olive oilfor brushing
- β2 cloves minced garlic
- β2 tablespoons chopped parsley
- βto taste salt and pepper
- β1 tablespoon lemon juiceoptional

1. Preheat your oven to 400Β°F (200Β°C).

2. Cut the smoked aubergine into 1-inch (2.5 cm) thick slices.

3. Place the aubergine slices on a baking sheet lined with parchment paper.

4. Drizzle with olive oil and season with salt and pepper.

5. Roast in the oven for 15-20 minutes, or until tender and lightly caramelized.
