French Beef Bourguignon
A classic French stew made with tender beef and smoky flavors.
Ingredients
- β2 pounds beefChuck or short ribs work well
- β6 slices smoked baconOptional
- β1 medium onionChopped
- β3 carrotMedium-sized
- β2 celeryMedium-sized
- β1 cup red wineDry red wine
- β2 cups beef brothHomemade or store-bought
- β2 tablespoons tomato pasteConcentrated tomato paste
- β2 sprigs thymeFresh thyme
- β2 bay leavesFresh or dried

Preheat oven to 300Β°F (150Β°C).

Season the beef with salt and pepper.

In a large Dutch oven, cook the bacon over medium heat until browned.

Remove the bacon and set aside.

Add the beef to the pot and cook until browned on all sides.

Add the onion, carrot, and celery to the pot and cook until the vegetables are tender.

Add the red wine, beef broth, tomato paste, thyme, and bay leaves to the pot.

Return the beef to the pot and cover with a lid.

Transfer the pot to the preheated oven and cook for 2 1/2 hours.
