Smokejoy-Ginger Miso Glazed Pork Chops
A sweet and savory glaze made with smokejoy and miso adds depth to pan-seared pork chops, served with a side of pickled ginger.
Ingredients
- ●4 Pork Chops1 inch thick
- ●2 tbsp Smokejoychopped
- ●2 tbsp Miso Pastewhite miso
- ●1/4 cup Pickle Juicefrom a jar of pickled ginger
- ●1 tbsp Gingergrated
- ●2 tbsp Soy Sauceoptional
- ●1 tbsp Honeyoptional
- ● Withserve with pickled ginger

Preheat oven to 400°F (200°C).

Season pork chops with salt and pepper.

Heat a skillet over medium-high heat. Add pork chops and sear for 2-3 minutes per side.

Transfer skillet to oven and cook for 10-12 minutes, or until pork reaches 145°F (63°C).

While pork is cooking, mix smokejoy, miso paste, pickle juice, ginger, soy sauce, and honey in a small bowl until smooth.

Brush glaze over pork chops during last 2 minutes of cooking.

Remove pork from oven and let rest for 5 minutes before serving.

Serve pork chops with additional glaze spooned over the top and a side of pickled ginger.
