Smoky Australian Kangaroo Stew
A hearty and flavorful stew made with tender kangaroo meat, smoky spices, and a mix of Australian herbs.
Ingredients
- β400g kangaroo steakcut into 2cm cubes
- β2 tbsp veggie oilfor browning
- β1 large onionchopped
- β3 cloves garlicminced
- β1 tsp smoky paprika
- β1 tsp dried thyme
- β250ml beef broth
- β125ml red wine
- β2 tbsp tomato paste
- β2 bay leaves

Heat oil in a large Dutch oven over medium-high heat. Brown the kangaroo in batches, then set aside.

Reduce heat to medium and sautΓ© the onion and garlic until softened.

Add the smoky paprika and thyme; cook for 1 minute.

Add the beef broth, red wine, tomato paste, and browned kangaroo. Bring to a boil.

Reduce heat to low and simmer, covered, for 1.5 hours, or until the kangaroo is tender.

Season with salt and pepper to taste.

Remove the bay leaves and serve hot.
