Smoky Canadian Ribs Tacos
A fusion of Canadian and Mexican flavors, these tender ribs are smothered in a rich pistachio-based BBQ sauce and served in a crispy taco shell.
Ingredients
- β2 pounds Canadian pork ribsBones-in ribs
- β2 tablespoons Smoky chipotle peppers in adoboDiced
- β2 cloves Roast garlicMinced
- β1/4 cup Pistachio butter
- β2 tablespoons Honey
- β1/4 cup CilantroChopped
- β2 tablespoons Lime juice
- β8-10 TortillasCorn or flour
- β1 teaspoon Coarse salt

Preheat grill to medium-high heat (400Β°F).

Remove the membrane from the back of the ribs and season with coarse salt.

Grill the ribs for 2-3 minutes per side, or until browned.

Transfer the ribs to a baking sheet and roast in the oven at 300Β°F for 20-25 minutes.

Meanwhile, combine chipotle peppers, roast garlic, pistachio butter, honey, and lime juice in a blender.

Blend the mixture until smooth and set aside.

Once the ribs are done, brush them with the pistachio BBQ sauce and return to the grill for an additional 2-3 minutes per side.

Warm tortillas on the grill or in a dry pan.
