Smoky Chorizo Spanish Bowl
A hearty, flavorful Spanish-inspired bowl filled with spicy chorizo, smoky vegetables, and crispy potatoes.
Ingredients
- β1 pound, sliced Spanish chorizo
- β2 teaspoons Smoky paprika
- β1 medium, thinly sliced Red onion
- β3 cloves, minced Garlic
- β2 large, peeled and cubed Potatoes
- β2 tablespoons Olive oil
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1/4 cup, chopped Fresh parsley

Preheat the oven to 425Β°F (220Β°C).

Toss the potatoes with 1 tablespoon of olive oil, salt, and black pepper on a baking sheet. Roast in the oven for 20-25 minutes, or until crispy.

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the sliced chorizo and cook for 3-4 minutes, or until browned.

Add the sliced red onion and minced garlic to the skillet with the chorizo. Cook for an additional 2-3 minutes, or until the onion is translucent.

Sprinkle the smoky paprika over the top of the chorizo mixture and stir to combine.

To assemble the bowls, divide the roasted potatoes among four bowls. Top with the chorizo mixture, then sprinkle with chopped parsley.
