Uruguayan Smoky Vegan Stir Fry
A smoky, plant-based stir fry inspired by Uruguayan cuisine. A flavorful and spicy dish that's perfect for a weeknight dinner.
Ingredients
- β1 block Smoky tofupressed and drained
- β1 medium Onion
- β1 medium Bell pepperany color
- β1 cup Mushroomsbutton or cremini
- β1 tsp Chili flakes
- β1 tsp Smoked paprika
- β2 cloves Garlicminced
- β2 tbsp Soy sauce (gluten-free)
- β2 tbsp Coconut oil

Heat the coconut oil in a large skillet over medium-high heat.

Add the onion and bell pepper and cook until tender, about 3-4 minutes.

Add the mushrooms and cook until they release their liquid and start to brown, about 4-5 minutes.

Add the smoked paprika, chili flakes, and garlic and cook for 1 minute, stirring constantly.

Add the smoky tofu and cook until browned on all sides, about 3-4 minutes.

Stir in the soy sauce and cook for 1 minute.

Season with salt and pepper to taste.
