Tunisian Smoky Chicken Tagine
A flavorful and aromatic stew originating from Tunisia, made with smoky chicken, crisp vegetables, and a blend of spices.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β2 teaspoons tagine spice blendavailable at middle eastern markets or online
- β1 teaspoon smoky paprikaadds a deep, smoky flavor
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β2 tablespoons olive oil
- β1 large onionchopped
- β2 medium carrotspeeled and chopped
- β1/4 cup cilantrochopped, for garnish
- β2 tablespoons lemon juicefreshly squeezed

Heat oil in the bottom of a large clay or ceramic tagine over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and ginger and cook for 1 minute.

Add chicken and cook until browned on all sides, about 5-7 minutes.

Add spice blend, paprika, and carrots. Stir to combine.

Add 1 cup of water to the tagine and bring to a simmer.

Reduce heat to low and cook, covered, until chicken is cooked through and carrots are tender, about 30-40 minutes.

Stir in lemon juice and season with salt and pepper to taste.

Garnish with chopped cilantro and serve over couscous or rice.
