Smoky Thai Tofu Bowl
A flavorful and nutritious vegan bowl filled with crispy tofu, smoky spices, and fresh herbs.
Ingredients
- β1 block (14 oz) Extra-firm tofu
- β1/2 cup Smoky peanut sauce
- β2 tbsp Thai red curry paste
- β1 cup Crispy rice
- β1/4 cup Fresh cilantro
- β2 tbsp Lime juice
- β2 tbsp Coconut oil
- βto taste Salt
- βto taste Black pepper
- β1/4 cup Chopped scallions

1. Preheat the oven to 400Β°F (200Β°C).

2. Cut the tofu into small cubes and place on a baking sheet lined with parchment paper.

3. Drizzle the coconut oil over the tofu and sprinkle with salt and black pepper.

4. Bake the tofu in the preheated oven for 20-25 minutes, or until crispy and golden brown.

5. In a small saucepan, heat the smoky peanut sauce over medium heat.

6. Add the Thai red curry paste to the saucepan and stir to combine.

7. Bring the sauce to a simmer and let cook for 2-3 minutes, or until heated through.

8. In a large bowl, combine the crispy rice, chopped scallions, and fresh cilantro.

9. Add the cooked tofu to the bowl and pour the smoky peanut sauce over the top.
