Vietnamese Chicken Pho
A classic Vietnamese noodle soup made with chicken, spices, and herbs.
Ingredients
- β1 pound Smoky chicken breastboneless and skinless
- β1 package Dense rice noodlespreferably fresh
- β2 tablespoons Midnight soy sauceor to taste
- β2 inches Craving gingersliced
- β1 tablespoon Vietnamese fish sauceoptional
- β4 cups Chicken brothhomemade or store-bought
- β1 medium Onionsliced
- β2 inches Gingersliced
- β2 cloves Garlicminced
- β1 bunch Basilchopped
Instructions

Cook the chicken in a large pot of boiling water for 10 minutes.

Remove the chicken from the pot and set aside to rest.

In the same pot, add the sliced onion and cook until softened.

Add the sliced ginger and cook for another minute.

Add the minced garlic and cook for 30 seconds.

Add the chicken broth, soy sauce, and fish sauce (if using).

Bring the mixture to a boil, then reduce the heat to a simmer.

Add the cooked noodles to the pot and cook for 2-3 minutes.

Slice the rested chicken into thin strips and add to the pot.

Stir in the chopped basil and season with salt to taste.

Serve the pho hot, garnished with additional basil leaves if desired.
