Smoky Tofu Casserole
A hearty, comforting casserole featuring smoky tofu and a hint of fermented flavor.
Ingredients
- β1 block (12 oz) extra-firm tofudrained and cubed
- β2 tsp smoked paprika
- β1 cup fermented vegetable mixsuch as sauerkraut or kimchi
- β1 box (8.3 oz) casserole mix
- β1 cup french breadcubed
- β1 cup shredded mozzarella
- β2 tbsp olive oil
- β1 tsp salt
- β1/4 tsp black pepper

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat.

Add the cubed tofu and cook until golden brown, about 5 minutes.

Add the smoked paprika and cook for an additional minute.

In a separate baking dish, combine the casserole mix, fermented vegetable mix, and cubed bread.

Stir in the shredded mozzarella.

Transfer the tofu mixture to the baking dish and top with additional mozzarella if desired.

Season with salt and black pepper to taste.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
