Smoky French Fish Stew
A hearty and flavorful fish stew made with smoky and french ingredients. Serve with crusty bread for a delicious meal.
Ingredients
- ●500g Fish fillets (Cod or Haddock)Fresh and sustainable
- ●150g Smoky BaconDiced
- ●1 large OnionChopped
- ●3 cloves GarlicMinced
- ●250ml French White WineDry
- ●500ml Fish StockHomemade or store-bought
- ●2 tbsp Tomato PasteConcentrated
- ●1 sprig ThymeFresh

Heat the oven to 200°C (400°F).

Season the fish fillets with salt and pepper.

Wrap the smoky bacon slices around the fish fillets and bake for 12 minutes.

In a large pot, sauté the chopped onion and minced garlic until softened.

Add the diced smoky bacon and cook for 2 minutes.

Pour in the French white wine and stir to deglaze the pot.

Add the fish stock, tomato paste, and thyme sprig. Stir to combine.

Add the baked fish fillets to the pot and simmer for 8 minutes.
