Smoky Slovakian Pork Stew
A hearty, comforting Slovakian-inspired stew made with tender pork, smoky flavors, and comforting vegetables.
Ingredients
- β1 1/2 pounds pork shouldercut into 1-inch cubes
- β1 cup smoky light beersuch as Pilsner or Lager
- β1 large onionchopped
- β2 medium carrotpeeled and chopped
- β2 large potatopeeled and chopped
- β2 cups souphomemade or store-bought beef broth
- βto taste black pepper
- β2 teaspoons slovakian paprikasmoked or sweet

Heat oil in a large Dutch oven over medium-high heat. Brown the pork cubes on all sides, about 5 minutes. Remove the browned pork from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the chopped carrot and potato, and cook for an additional 5 minutes.

Add the browned pork back to the pot, along with the light beer, soup, black pepper, and Slovakian paprika. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, until the pork is tender, about 2 hours.

Serve hot, garnished with chopped fresh parsley or dill, if desired.
