Chicken Satay
Grilled chicken skewers inspired by Malaysian cuisine, served with a smoky peanut sauce.
Ingredients
- β500g chicken breastcut into 1-inch cubes
- β250ml smoky peanut saucestore-bought or homemade
- β100ml coconut milkfull-fat canned
- β2 tbsp fish sauceor to taste
- β2 tbsp lime juicefreshly squeezed
- β1 tsp brown sugaror to taste
- β1 tsp grated gingerfreshly grated
- β2 cloves garlicminced
- β1/4 cup coriander leaveschopped, for garnish
- β8-10 tofu skewersoptional

1. In a large bowl, whisk together peanut sauce, coconut milk, fish sauce, lime juice, brown sugar, ginger, and garlic.

2. Add the chicken cubes to the marinade and mix well. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat the grill to medium-high heat.

4. Thread the marinated chicken onto skewers, leaving a small space between each piece.

5. Grill the skewers for 8-10 minutes per side, or until the chicken is cooked through.

6. Meanwhile, toast the tofu skewers (if using) on the grill for 2-3 minutes per side.

7. Serve the grilled chicken with the peanut sauce, garnished with coriander leaves and toasted tofu (if using).
