Smoky Irish Stew
A hearty, comforting stew made with tender chunks of meat and flavorful vegetables.
Ingredients
- β1 1/2 pounds Irish Stew MeatChuck or round work well
- β2 medium AubergineSliced
- β1 large OnionChopped
- β4 medium CarrotsSliced
- β2 large PotatoesDiced
- β1 teaspoon Smoky Smoked PaprikaSmoked paprika adds a smoky flavor
- β1 teaspoon Mustardy MustardWhole-grain mustard adds a tangy flavor
Instructions

Heat 2 tablespoons of oil in a large pot over medium-high heat.

Add the chopped onion and cook until browned, about 5 minutes.

Add the sliced aubergine and cook until tender, about 5 minutes.

Add the sliced carrots and diced potatoes and cook for 5 minutes.

Add the Irish stew meat and cook until browned on all sides.

Add the smoked paprika and mustard, and stir to combine.

Add 4 cups of beef broth and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until the meat is tender.

Season with salt and pepper to taste.
