Smoky Gratin Vegetable Casserole
A hearty, smoky gratin vegetable casserole, perfect for a cozy evening meal. This dish combines the sweetness of vegetables with the depth of smoky flavors.
Ingredients
- β2 tablespoons Vegetable oil
- β1 cup, shredded Smoky cheese
- β3 medium, peeled and thinly sliced Norwegian potatoes
- β1 large, thinly sliced Onion
- β1 cup, sliced Mushrooms
- β3 cloves, minced Garlic
- βto taste Salt
- βto taste Black pepper
- β1 tablespoon, chopped Fresh thyme

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, heat the vegetable oil over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and lightly browned.

Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown.

Add the minced garlic and cook for 1 minute, stirring constantly.

Stir in the chopped thyme. Season with salt and black pepper to taste.

In a separate saucepan, combine the shredded smoky cheese and 1 cup of water. Heat over low heat, stirring until the cheese is melted and smooth.
