Irish Smoked BBQ Ribs with Date Glaze
A twist on traditional BBQ ribs, featuring a sweet and spicy date glaze paired with the smokiness of Irish smoked bacon.
Ingredients
- β2 pounds Irish smoked bacon
- β2 racks Pork ribs
- β1/4 cup Glazed dates
- β2 tablespoons Smoky paprika
- β1 tablespoon Brown sugar
- β2 tablespoons Apple cider vinegar

Preheat smoker to 225Β°F (110Β°C).

Remove the membrane from the back of each rack of ribs.

In a small bowl, mix together brown sugar, smoky paprika, and a pinch of salt. Rub the mixture evenly onto both racks of ribs.

Place the ribs in the smoker and cook for 4 hours, or until the meat starts to pull away from the bone.

While the ribs are cooking, prepare the date glaze by mashing the glazed dates in a bowl.

After 4 hours, brush the ribs with the date glaze and cook for an additional 30 minutes.

Remove the ribs from the smoker and let rest for 10 minutes before serving.
