Smoky Indian Curry Tofu

- β1 block (14 oz) tofuextra-firm
- β2 tbsp smoky curry powderadjust to taste
- β1, diced roasted red pepperfrom a jar
- β1 medium, diced onion
- β2 cloves, minced garlic
- β1 can (14 oz) coconut milk
- β1, diced tomato
- βto taste salt
- βto taste black pepper
- βchopped, for garnish fresh cilantro

Heat oil in a pan over medium heat.

Add onion and cook until softened, about 5 minutes.
