Smoky Kenyan Chicken Curry
A flavorful and aromatic Kenyan-inspired curry made with smoky chicken, roasted spices, and a blend of spices.
Ingredients
- β1 1/2 pounds Chicken breastboneless and skinless
- β2 tablespoons Smoky roasted spicessmoky paprika and roasted cumin
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1-inch piece Gingergrated
- β2 teaspoons Curry powderKenyan-style curry powder
- β1 teaspoon Cuminground
- β1 teaspoon Corianderground
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste
- β1 can Coconut milkfull-fat coconut milk
- β1 cup Wateras needed

Heat oil in a large pan over medium heat.

Add onion, garlic, and ginger. Cook until the onion is translucent.

Add chicken. Cook until browned on all sides.

Add curry powder, cumin, coriander, salt, and pepper. Cook for 1 minute.

Add coconut milk and water. Stir to combine.

Bring to a simmer. Reduce heat to low. Cover and cook for 20-25 minutes or until the chicken is cooked through.

Stir in smoky roasted spices. Cook for 1-2 minutes.
