Roasted Avocado Salad with Smoky Feta Crumble

Ingredients

- β1 medium Red Onion
- β1/2 cup crumbled Smoky Feta Cheese
- β2 tbsp Mediterranean Oregano
- β2 tbsp Lemon Juice
- β2 tbsp Olive Oil
- β Salt and Pepper
- β2 tbsp Chopped Fresh Parsley

Preheat the oven to 400Β°F (200Β°C).

Cut the avocado in half and remove the pit. Place on a baking sheet lined with parchment paper.

Roast the avocado in the oven for 15-20 minutes, or until slightly tender.

While the avocado is roasting, mix together the red onion, smoky feta cheese, and mediterranean oregano in a bowl.

Squeeze the lemon juice over the mixture and stir to combine.
