Middle Eastern Smoky Bean Tagine
A hearty and flavorful stew originating from North Africa, made with smoky beans, roasted spices, and a hint of eastern flair. Serve with crusty bread or couscous for a satisfying meal.
Ingredients
- β1 can (14 oz) smoky beansdrained and rinsed
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup dried apricotschopped
- β1 cup white beanscooked
- β1 tsp cuminground
- β1 tsp corianderground
- β1/2 tsp paprikasmoked

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add smoky beans, dried apricots, white beans, cumin, coriander, and paprika.

Stir to combine and cook for 1 minute.

Add 2 cups of water and bring to a boil.
