Smoky Polish Pork Gratin
A hearty, comforting Polish-inspired dish featuring tender pork and a rich, smoky gratin.
Ingredients

- β1 tablespoon smoked paprika
- β3 cloves roasted garlicminced
- β1 cup gratin cheeseshredded
- β2 tablespoons all-purpose flour
- β2 tablespoons unsalted butter
- β1 cup heavy cream
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Season the pork with salt and pepper.

In a large Dutch oven, heat 1 tablespoon of butter over medium-high heat.

Sear the pork until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Add the remaining 1 tablespoon of butter to the pot, then add the minced garlic and cook until fragrant, about 1 minute.

Gradually pour in the heavy cream, whisking constantly to avoid lumps.

Bring the mixture to a simmer and cook until thickened, about 5 minutes.
