Smoky Zucchini Fritters
A twist on traditional zucchini fritters with a smoky flavor thanks to the addition of roasted vegetables.
Ingredients
- β2 large Zucchini
- β1 large Roasted Red Pepperdiced
- β3 cloves Roast Garlicminced
- β1 tsp Smoked Paprika
- β1 cup All-purpose flour
- β1/2 cup Breadcrumbs
- β1 Egg
- β1/4 cup Grated Parmesan

Shred the zucchini and set aside.

In a food processor, combine the roasted red pepper, roasted garlic, smoked paprika, flour, breadcrumbs, egg, and Parmesan. Process until well combined.

Add the shredded zucchini to the food processor and process until just combined.

Using your hands, shape the mixture into 8-10 patties.

Heat a large non-stick skillet over medium-high heat.

Add 2-3 patties to the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.

Repeat with the remaining patties.
