Cochinita Pibil Tacos
A traditional Mexican dish from the Yucatan region, cochinita pibil is slow-cooked pork marinated in citrus juice and spices.
Ingredients
- β1 pound smoky pork shoulderpreferably boneless
- β1/2 cup orange juicefreshly squeezed
- β2 tablespoons lime juice
- β4 cloves garlicminced
- β2 teaspoons Mexican oregano
- β1 teaspoon cumin
- β2 tablespoons chipotle peppers in adobo sauce
- β2 tablespoons cochinita pibil spice blend
- β1 tablespoon piloncillo (or brown sugar)
- β8-10 corn tortillas tortillaspreferably handmade
- β1 medium onionthinly sliced

1. In a blender or food processor, combine orange and lime juice, garlic, oregano, cumin, chipotle peppers, cochinita pibil spice blend, and piloncillo. Blend until smooth.

2. Place the pork shoulder in a large ziplock bag or a shallow dish. Pour the marinade over the pork, turning to coat evenly. Seal the bag or cover the dish with plastic wrap.

3. Refrigerate the pork for at least 2 hours or overnight, turning occasionally.

4. Preheat a grill or grill pan to medium-high heat. Remove the pork from the marinade, letting any excess liquid drip off.

5. Grill the pork for 5-7 minutes per side, or until it reaches an internal temperature of 190Β°F (88Β°C). Let it rest for 10 minutes before slicing.

6. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

7. Assemble the tacos by slicing the pork and serving it on a tortilla with sliced onion and your desired toppings.
